These Cheese Stuffed Beef Rolls provide the flavors of lasagna, without all the carbs! I love this dish because it uses ingredients I always have on hand (with the exception of the roast beef)
This dish is perfect for a weekday meal — requiring less then ten minutes of prep time. Pop it in the oven and you’ll have 40 minutes to squeeze in a quick workout, do homework with the kids, or catch up on that book you’ve been meaning to get to 🙂
To make these Cheese Stuffed Beef Rolls, simply spread a half cup of pasta sauce into the bottom of an 12×8 inch baking dish. Combine the egg, seasonings, Parmesan and a portion of the mozzarella cheese and French fried onions. Spoon the mixture onto the road beef slices, roll up jelly-roll style, and place them in the dish.
Top with sauce and bake for about 40 minutes.
Finish the dish by adding the remaining mozzarella and French fried onions and bake until golden brown.

Cheese Stuffed Beef Rolls
Ingredients
- ¾ lb Deli Roast Beef (8 slices)
- 2 cups Rao's Pasta Sauce or other low carb sauce, divided
- 1 Egg slightly beaten
- 1 tsp Italian Seasoning
- 1 tsp Garlic Power
- ¼ cup Parmesan Cheese, Grated
- 1 cup Mozzarella Cheese, Whole Milk (4 oz), divided
- 1 can French Fried Onions (2.8 oz), divided
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Spread 1/2 cup of pasta sauce on the bottom of a 12×8 inch baking dish.
- In a large bowl, combine egg, Italian seasoning, garlic powder, Parmesan cheese, 1/2 cup of the mozzarella and 1/2 can of the french fried onions.
- Spoon equal amounts of the cheese mixture on the end of each beef slice. Roll up slices jelly-roll style and arrange, seem side down, in baking dish. Pour remaining sauce over rolls.
- Bake uncovered for 40 minutes or until heated through. Top rolls with remaining mozzarella and onions. Bake for 3 minutes more or until cheese is melted and onions are golden brown.
